Healthy Cornbread Muffins

These really are as AMAZING as they look!!! :)
Casey made this for breakfast for us awhile ago.  He figured out a lot of the substitutions himself and made a healthy breakfast for me.  I'm SO grateful that my sweet husband completely supports my efforts to loose weight.  With the recipe below, each muffin has 93 calories and it should make 12 total.  These didn't last too long in our home.  After school, I would come home and eat one as a low calorie but filling snack.

1 c. cornmeal
1 c. whole wheat flour
1 t. baking soda
1 t. baking powder
1 t. salt
1/4 c. splenda
1 whole egg and 1 egg white (or for even a few less calories per muffin do 3 egg whites)
12 oz light yogurt (2 containers.  We used vanilla flavor)
2-3 T. natural apple sauce
(Note: if you are eating this as a dessert muffin then add 1-2 t. vanilla.  If you are going to eat these with chili/ main course then leave this out.)
A little bit of water

Preheat oven to 400* and lightly spray 12 muffin cups.  Stir together cornmeal, flour, baking soda, baking powder, salt and splenda in a large bowl.  In a different bowl, whisk the eggs and stir in the applesauce and yogurt (and possibly vanilla).  Pour the wet mixture into the cornmeal mixture and stir until just combined.  (You might have to add a little extra water --Casey didn't-- at this point but be careful to not over mix!)  Fill each muffin cup 2/3 full with batter.

Bake for 15-18 minutes until toothpick test comes out clean.  Cool on a wire rack.  Serve with chilli or butter and honey.  (I use a little sugar free jam or just eat them plain--they are that delicious that they really don't need anything!)
